"Charcuterie starts with thoughtfully sourced ingredients and patience. We are committed to working with only small family farms raising animals the right way: on full pasture with no added growth hormones or antibiotics. Through sustainable farming practices, our farmers produce a healthier, happier, nutritionally dense animal. Our products feature only heritage breed hogs, cattle, lamb, and poultry; preserving tradition and showcasing their unique qualities through each hand tied salami." - George Turkette (Owner of Turchetti's Salumeria)
George Turkette started his culinary career after traveling across the country as a professional guitar tech. After working at several restaurants in Indianapolis, George was inspired to design a charcuterie program that utilized the whole animal - honoring farmer and animal. George used his family’s Italian surname as a nod to his heritage and the “Old World” tradition of slow curing meat. The extra time allows for a healthy and edible white mold to bloom, developing our distinct flavor. You can taste the difference. Turchetti’s Salumeria opened as a wholesale operation in May of 2017 serving Indianapolis’ best restaurants. They will soon offer a full service butcher shop and deli to the heart of Fountain Square.
Their whole animal philosophy is reflected in the variety of our 30 products including smoked deli meats, sausages, salami, and whole muscle. They practice a zero waste mentality, creating a line of dog food from the non-choice consumables. All of their products are created in our USDA compliant facility in Fountain Square, Indianapolis in small batches.
Creating lasting relationships with farmers is at the core of Turchetti's philosophy. They’re committed to working with only small family farms raising animals the right way. All of their farmers raise heritage breed animals on full pasture with no added growth hormones or antibiotics. Through sustainable farming practices, their farmers are able to produce a healthier, happier, nutritionally dense animal.
