Pie pumpkins are small and dense and usually have a medium or dark orange color. These pumpkins have a sweet flesh, and can be eaten like other winter squashes.
To prepare, slice the stem off and slice the pumpkin in half. Clean out the seeds from the inside of the pumpkin and place them face down on a baking sheet to bake. You can choose to either bake with the skin on and remove later or remove the skin before baking. You can also puree the pumpkin and roast the seeds to enjoy as a snack later!
Pie pumpkins will store well at room temperature for up to a month. If stored in the refrigerator, pumpkins can last up to three months. Use cut pumpkin within five days.
