Ingredients

• 1 acorn squash, peeled, seeded, and cut into ½-inch cubes*
• 24 ounces sweet potatoes, peeled and cut into ½-inch cubes*
• 2 tablespoons avocado oil
• 2 tablespoons unsalted butter
• 1 teaspoon salt
• 1 tablespoon chopped rosemary
• 1 tablespoon chopped thyme
• Fresh pepper
Directions:
Preheat oven to 400 degrees. Toss together ingredients in a large bowl. Spread evenly on a parchment-lined, rimmed cookie sheet. Roast until tender, 45 minutes. Serve warm.
