Broiled Green Beans with Romesco Sauce

• 1 pound green beans, ends trimmed*
• 1 tablespoon avocado oil or another high heat oil, plus more for drizzling
• Kosher salt
• 1 package Haven’s Kitchen Romesco Sauce*
• ½ cup roughly chopped flat-leaf parsley*
Adjust oven rack to as close as possible to the broiler. Preheat oven to broil. In a large bowl, toss the green beans and 1 tablespoon of avocado oil and a heavy pinch of salt. Line a baking sheet with aluminum foil, add green beans, and arrange in a single layer. Broil green beans until they are blistered and lightly charred, 2-5 minutes. Remove from oven and return green beans to the bowl.
Toss the green beans with romesco sauce and parsley until well coated. You may need extra oil to thin the romesco sauce so that it evenly coats the green beans like a thick dressing. Adjust seasonings with salt. Serves 4-6
